If you want to prepare it at home here is the recipe…

  • First of all, put flour in a bowl and coat the chicken pieces in flour. Then dip it in beaten eggs and cover with panko breadcrumbs.
  • Take a pan and place the chicken pieces in it. You should fry it for 3-4 minutes per side or until it is golden brown from all the sides.
  • Take it out from the pan when cooked and set aside.
  • You can optionally make the sauce, too. Fry onion, carrot and potato. Add garlic, ginger, curry powder, soy sauce, mirin, and stock. Boil until thick.
  • Roll out the puff pastry and cut into squares or rectangles. Now you should place it in a baking dish, then add the curry sauce, put the chicken you fried before on the top and fold the pastry edges over. You should sprinkle extra panko breadcrumbs on the pastry.
  • You should preheat your oven to 200°C (400°F). Place the pastry inside the oven and bake for 20-25 minutes or until you see it is golden brown. 
  • Take it out from the oven when it is baked and let it cool slightly. Enjoy!

There are many items on Gregg’s menu  which can be ordered from the restaurant and can also be made at home, but this “Katsu Chicken Bake” is my favourite because of its easy method of cooking and great taste.
